bacon and egg breakfast pies
This is like a breakfast pizza I make at work. Lay out your dough, and base it like a white pizza (olive oil, garlic, and like a basil-oregano mix). Sprinkle just a little cheese then whatever veggies you want. I like red onions, jalapenos, spinach or mushrooms on occasion. Then some bacon… or a lot of bacon. Then you whip freshly grated mozzarella with the eggs and it gets all gewy (this will not happen with the processed “shredded” stuff in the bag because it’s too stiff and won’t mix well with the egg to get the correct effect, trust me). I always like to add like an eighth to a quarter cup of milk to the mix, depending on how many eggs, because it really aerates the mixture to give a fluffier texture in the end. Spread this mixture over your toppings - you kind of have to use your fingers if you get the correct consistency. Then bake till golden brown. The proper mix of cheese and egg creates almost a thin, airy, cloud-like blanket to your toppings.
